This gelato is wonderfully creamy and tastes really good! Like most of my recipes it's not complicated to make.
1 x 395g can of sweetened condensed milk
400g-500g fresh or frozen berry fruit
1-2 teaspoons vanilla
Put the cream, condensed milk and vanilla into a large bowl and beat until you have soft peaks. Transfer the cream-condensed milk mix into a lidded freezer-proof container and freeze for one hour.
Using a blender whizz the berry fruit until you have a consistency you like. You can blend to a smooth puree, but I like a mix of puree and larger "bits". I've used strawberries and blueberries to make this gelato - just use whatever mix suits.
After an hour remove the cream mixture from the freezer. Using a large spoon swirl through the pureed berries. Return the gelato to the freezer for 6-8 hours or overnight.
Take the gelato out of the freezer 20-30 minutes before serving. Enjoy!
Variation: Try using apricots or red plums that have been stewed, cooled and pureed.
